Chickpea ‘Tuna’

One of the best and most simple swap recipes I know. Delicious spread in a sandwich with salad or tossed through pasta with your favourite salad veggies. 

Ingredients

  • 1 can chickpeas
  • ½ red onion, diced (optional)
  • 50g vegan mayonnaise
  • 1 tsp Dijon mustard
  • 2 tbsp white or malt vinegar
  • Salt and pepper, to taste

Method

  1. Drain the chickpeas and mash using a potato masher or fork, or pulse briefly in a blender.
  2. Add the remaining ingredients and mix until well combined.
  3. Season with salt and pepper to taste.

Serve in a salad sandwich, tossed through pasta, or on wholewheat crackers.
