Chickpea ‘Tuna’
One of the best and most simple swap recipes I know. Delicious spread in a sandwich with salad or tossed through pasta with your favourite salad veggies.
Ingredients
- 1 can chickpeas
- ½ red onion, diced (optional)
- 50g vegan mayonnaise
- 1 tsp Dijon mustard
- 2 tbsp white or malt vinegar
- Salt and pepper, to taste
Method
- Drain the chickpeas and mash using a potato masher or fork, or pulse briefly in a blender.
- Add the remaining ingredients and mix until well combined.
- Season with salt and pepper to taste.
Serve in a salad sandwich, tossed through pasta, or on wholewheat crackers.
