Easy Energy Balls

These easy protein balls are just 100 calories and make a great mid morning snack or to help with an afternoon slump. They taste great with a hot drink.

My toddler adores them straight out of the fridge 

Ingredients (makes 20 balls)

  • 10 pitted dates
  • 100g porridge oats
  • 5 tbsp peanut butter
  • 3 tbsp maple syrup
  • 1 tbsp sunflower seeds
  • 1 tbsp pumpkin seeds
  • 2 tbsp flaxseed
  • 50g dark chocolate, grated

Method

  1. Soak the dates in water for about 10 minutes, then blend until smooth.
  2. Add all remaining ingredients and blend again until the mixture reaches a chunky, combined consistency.
  3. If the mixture is too thick, add 1 tablespoon of water at a time until you reach your desired texture.
  4. Roll into small balls and store in the fridge until ready to use.
