French Onion Spaghetti

French Onion Spaghetti

This is such a simple and delicious recipe. Although it takes some time to properly cook the onions, you’ll be glad you took the time to.  Use an alternative past for a gluten free version.

Serves 4

Ingredients

3 red onions
1 entire head of garlic
3 tbsp lemon juice
2 tsp paprika
1 tsp dry thyme
400 mls coconut milk 
350g wholewheat spaghetti  
Fresh parsley
Pine nuts

Method 

Preheat the oven to 200°C. Cut the onions into strips and add to a casserole dish along with the lemon juice, paprika, thyme, garlic and coconut milk.

Add a couple of tablespoons of water and cover with foil. Bake for 45 minutes to an hour until the onions are brown and caramelised. Stir half way through to ensure onions aren’t sticking. 

While the onions are cooking cook the pasta and reserve 300mls for later. 

When the onions are finished, remove the garlic and squeeze in the cloves. Add the pasta and any water needed and stir until all coated in the sauce.

Garnish with pine nuts and fresh parsley and serve.
